Guest guest Posted November 1, 2002 Report Share Posted November 1, 2002 Tortilla Soup 1 onion, chopped 2 cloves garlic, minced 1 t olive oil Sauté onion and garlic in oil until soft. Add: 1 can diced tomatoes 1 can sliced olives 1 can chopped green chilies 1 can pinto beans 1 can corn 1 c salsa 4 cups chicken-style broth 1 T ground cumin 1 T mild chili powder salt to taste. Simmer until heated through. Serve over rice, top with shredded soy cheese (or omit) and crunched up tortilla chips. Warm up some flour tortillas to serve alongside.
