Sweet Potato Souffle

 

1 can crushed pineapple

2 uncooked sweet potatoes, grated

1 1/2 c. sugar (or alternative such as Sucanat, date sugar, or maple syrup)

1 c. raisins

1 c. chopped nuts

3/8 c. vegan margarine

1 tsp. vanilla

1 c. milk alternative (rice or soy)

 

Drain pineapple, combine pineapple & remaining ingredients. Pour into

greased casserole. Bake at 350 F. for 35 mins. Bake for 10 mins. longer.

 

Garnish with chopped nuts if desired.

 

8-10 servings.
