They sell gluten pasta, but then they have this box (shaped just like a Kraft Mac N Cheese box) that is " Penne and Chreese " , which uses rice penne and has a packet of the chreese in it (made from lentil flour and spices). These are nice because I have sent a couple of boxes to every member of my family, in case my 3 year old celiac/dairy allergic son is ever at their home. So convenient! You can also buy just the packets of Chreese for 99¢, and it makes more than one batch of Mac and Chreese for us. Also, Tuesday night we had " lentil pilaf " from Trader Joe's. It comes with the spices, rice and the " orzo " is lentils. It was wonderful, pretty (I served it to guests) and EASY! With that we had buttercup squash, which I just cut in half, threw some Earth Balance margarine and brown sugar on and tossed in the oven covered with foil for an hour (delicious), mashed potatoes with skins on (who has time to peel? They're prettier and healthier anyway), and broccoli with hollandaise (we do eggs, and this uses an egg). I also served gluten free rolls, which take a total of 5 minutes to throw together, and apple crisp for dessert. It was fabulous and actually very easy to prepare. I've included the apple crisp recipe (which I adapted from a Mark Bittman cookbook) and the rolls (which I adapted from a Lisa Lewis cookbook) below: Gluten free rolls 1/2 cup oil 1/2 cup milk sub 3/4 cup chickpea flour 3/4 cup tapioca starch 1 T sugar 3 tsp. egg replacer (or you may use 1 egg, I never do) 2 tsp. xanthan gum 2 tsp. Featherweight (or equiv.) baking powder Mix all together just until mixed (do not overmix), mold into balls (no science - just plop them around the same size) and bake for 20-25 minutes on ungreased cookie sheet in 400 degree oven, until golden brown. (In my convection oven on stoneware, they only bake for 15 minutes). Apple Crisp Apples peeled and sliced (around 8 apples) 1 heaping tsp. cinnamon 2 T granulated sugar Mix these together and throw in the bottom of a 9x13 pan. Then: 1-1/3 cups brown sugar 5 T cold margarine (I use Willow Run or Earth Balance) 1 cup rolled Quinoa 1 cup Bob's Red Mill All Purpose GF flour (or you could use 3/4 cup chickpea and 1/4 cup starch) 1/4 cup chopped nuts (optional) Put these in food processor and briefly pulse until JUST mixed and crumbly. DO NOT just let it run or you will ruin the consistency (this is the same for regular crisp!) Or, you could cut the butter in the traditional way with a knife until the topping is crumbly, but the food processor is a lifesaver in my mind. Throw the topping on the apples in the pan, evenly, and bake in 400 degree oven for 30 to 40 minutes, until the topping is browned and applies are tender.
