Guest guest Posted October 31, 2002 Report Share Posted October 31, 2002 Tomato Pesto 2 large Roma tomatoes 1/4 cup pine nuts 1/4 cup walnut pieces 1/4 cup olive oil 1 T. lemon juice 1/2 cup chopped fresh basil 1/8 t. tarragon 1/2 t. salt Place tomatoes, pine nuts, walnuts, olive oil, and lemon juice in a food processor. Briefly process until still coarse. In a bowl, combine the processed mixture with basil and seasonings. Serve on crackers or gf pasta.
