Guest guest Posted October 31, 2002 Report Share Posted October 31, 2002 GREEK LENTIL SOUP 2 cups uncooked lentils 8 cups water or vegetable stock 1/2 onion, chopped 1 small carrot, chopped 1 celery stalk, chopped 1 small potato, chopped 2 T olive oil 2 bay leaves 1-1/2 to 2 tsp salt 2 tsp lemon juice Wash lentils. Mix all ingredients except the vinegar in a soup pot and cook until the lentils are very soft, about one hour. Stir in lemon juice at the end and serve.
