A Kitchen Gift ~

 

Cracker Jack

 

2 quarts popped corn

2 sticks vegan margarine

1/2 c dark corn syrup

1 1/3 cup sugar

1 tsp vanilla

1/2 c peanuts

 

Combine popcorn and peanuts in a large bowl or pot and set aside.

In a medium sauce pan, over medium heat, combine remaining ingredients,

stirring constantly until everything's thoroughly melted together and

a bit bubbly. Pour hot mixture over popcorn and peanuts, tossing-n-stirring

everything around as you do so (to evenly distribute peanuts and, as nearly

as possible, coat each piece).

 

Dump finished mixture out onto a buttered cookie sheet and quickly spread

around to form one flat layer. Let cool, then break into Cracker Jack sized

morsels and store in a moisture-proof, air-tight container (or containers).
