I had a Thai Salad the other night with a wonderful peanut dressing. I don't usually eat peanuts, so thought I would try to replicate the dressing. I tweaked this one that I found on the internet. The dressing wasn't the same, but it was good. I like this on a salad with romaine, radishes, carrots, tomatoes, and red onions. Title: Thai Almond Dressing Ingredients 1/3 c rice vinegar 1 c almonds (the original recipe called for 1/3 cup peanut butter) 2/3 c water 2 tb soy sauce (I used wheat-free tamari) 2 cl garlic (could use more to taste) 2 ts honey 3 dashes cayenne Instructions Combine all ingredients in blender container and blend until smooth.
