Cheezy Cauliflower Soup

Cheezy Cauliflower Soup

 

1/2 cup clean raw cashews

3 1/2 cups water

2 cups water from steamed cauliflower

1/4 cup cornstarch

3 Tbsp. oil

1 tsp. onion powder

2 1/2 Tbsp. lemon juice

1/4 cup nutritional yeast flakes

2 tsp. salt

2 tsp. Lawry's seasoning salt

1/4 cup dried parsley

1 head steamed cauliflower

 

Blend cashews with small amount of water until smooth. Add seasonings and

oil, but not the parsley. Blend cauliflower. It takes about 3 batches to

get all of the cauliflower and its water blended together. Thicken on stove

and add parsley. This is a very quick soup to make, taking about 15 minutes

from start to finish.

This sounds soooo wonderful - do you think Arrowroot powder would work

for the cornstarch, or would you recommend a tapioca starch? My son

cannot have corn.

It's such a small amount that I think any starch will replace the corn well

enough. Tapioca or potato would be my choice simply because arrowroot is so

expensive.
