Guest guest Posted October 29, 2002 Report Share Posted October 29, 2002 Hi, everyone, 3 cups (packed) fresh basil leaves 3-4 large cloves garlic 1/2 cup good olive oil 1/2 cup pine nuts salt to taste Whiz up the garlic and basil in a food processor. Add the nuts and whiz again. With the processor still running, add the olive oil slowly, drizzling it in, and the pesto will form into a lovely paste. Remove from processor and add salt to taste. This stores wonderfully in the freezer - just be careful if you decide to nuke it to defrost - you do NOT want to cook it (I know this from experience - blush).
