My two younger sons are both sensitive to gluten and corn. DH is sensitive to dairy. We are also trying to avoid soy. When I have to fix dinner in a hurry, we have rice with Five Brother Tomato & Basil sauce. Following is our recipe for " 5 Minute Chocolate Cake " . I got the recipe somewhere online about 3 years ago but I don't remember what the site was. 1 cup sugar, 1-1/2 cup GF flour (1 c. rice flour + 1/2 c. potato or tapioca starch), 1/2 tsp. sea salt, 1/4 cup cocoa powder, 1 tsp. baking soda, 1 Tbs. lemon juice, 1/3 cup oil, 1 tsp. vanilla, 1 cup cold water Preheat oven to 350 degrees. Mix ingredients in order given. Pour into ungreased square 8 " cake pan and bake for 30-35 minutes. A double recipe is about right for a bundt pan. I don't even frost it and it disapears every time. This is the first cake I've made that didn't have a fudgey bit in the middle. If anyone is wondering it tastes really nice with carob instead of cocoa. It sounds like you have a busy household and the cook has alot of things to consider with different family members and their dietary needs.
