Macaroni and Cheese

 

2 cups uncooked quinoa macaroni (cooked before using)

 

1 cup raw cashews

2 tsp. nutritional yeast flakes

2 tsp. onion powder

1/3 cup lemon juice

2 cups broccoli flowerets, optional

1/2 tsp. paprika

2 tsp. salt

2 tsp. garlic powder

2 cups boiling water

1/2 cup seasoned gluten-free bread crumbs (optional)

 

Blend cashews with a little water until smooth. Then add remaining

ingredients except bread crumbs and broccoli. Whiz until smooth. Pour over

top of macaroni in casserole dish. Sprinkle bread crumbs on top. Cover and

bake 20 minutes at 350 degrees, then uncover and bake 10 more minutes.
