There are lots of us, all at different stages of dietary restriction, and we are here for different reasons. But, we all work together to assist one another in finding healthy and delicious foods we can enjoy on our individual dietary plans. I'm the mom of two teen-age boys and a husband who is gluten-free. We have never served meat in our household. . .and let me assure you that your son can grow up to be most healthy without it. We've only been gluten-free at our house for just about 2 years. The gluten-free aspects have been much more difficult for me than the meat issues, but I think it all depends upon where we are coming from and where our comfort zones are. Vegan means 100% vegetarian. A vegan diet eliminates all meat, poultry, fish, eggs, and dairy products. Our archives have many recipes already posted that you are welcome to browse through. If you type in #1 it will take you to the first message posted to this list. . .and you can then go through the messages from there. Recipes are pretty easy to identify by subject line. Acouple questions about what are " okay " to eat in your household (so we can better help you). Can your son eat seeds (sunflower, pumpkin, sesame, etc.)? Most veg*n recipes that call for nuts can easily use seeds instead. For example, the melty cheese recipe that calls for cashews can use sunflower seeds). You also mentioned that legumes are not allowed but that beans are. Can you explain what you mean by legumes? Lentils? Split peas? Generally beans are placed in the catagory of legumes, but it sounds like maybe he is only allergic to some, not all. What about soy? Soybeans are also a legume, so maybe those are " off limits " also. Are the regular non-gluten grains all okay? It sounds to me that you may not be eliminating eggs, milk, and cheese (at least yet). Let me assure you that you are " still " most welcome here! Carol, we don't think you are a dumby! We have all had to learn new and sometimes unusual ways to prepare food!
