Guest guest Posted October 26, 2002 Report Share Posted October 26, 2002 1 cup lentils – boil for about 20 minutes (or until tender), then drain 2 tablespoons olive oil 1 small onion - chopped 1 clove garlic - crushed 1 zucchini – grated 1 carrot - grated 1 cup cooked and mashed pumpkin 1/4 cup corn relish 1/4 cup sesame seeds 2 tablespoons chopped parsley 2 cups bread crumbs (or rice crumbs) salt and pepper to taste extra crumbs for coating Fry onion and garlic in olive oil. When onion is clear , add grated zucchini and carrot - cook until tender. Mix all ingredients together. Form patties and coat in crumbs. Fry in a little oil until golden on both sides.
