Yams, sweet potatoes or winter squash ( we used acorn) 1/3 cup pure maple syrup or 1/4 cup honey 1/2 tsp. cardamom 1/2 tsp. coriander 1 1/4 cup raisens 1 cup milk, cashew, soy, almond or whatever you use 2 tsp. vanilla 12-15 pecan halves 3/4 tsp. salt or to taste 1. Steam or bake yams/squash until thoroughly cooked and soft. 2. Mash peeled yams/squash and add all ingredients, stirring the amount of milk needed to make nice moist texture. hint: a quick way to do this is to place the cooked yams and remaining ingredients except raisens and nuts into blender and whiz until well mashed. Then stir in raisens. 3. turn into a 1 1/2 quart casserole dish and garnish top with pecan halves if desired. 4. bake at 350 for 25-35 minutes.
