Guest guest Posted October 21, 2002 Report Share Posted October 21, 2002 Wild Rice Pilaf with Cashews 1/4 cup vegan margarine or olive oil 1/3 cup chopped onion 1 cup long grain wild rice 2 cups chicken-style broth 1/2 tsp. salt 1/2 cup chopped cashews Melt margarine (or oil) in a saucepan and cook onion until tender, Add rice and stir. Cover with chicken broth and sprinkle with salt. Cover and simmer for 30 - 40 minutes or until all liquid is absorbed. Some rice takes longer than others so check rice frequently towards the end of cooking time.
