LaDonna,

 

Here is the Bread Mix from Bette's book. I will send the recipe next.

 

12 cups 24 cups

Garfava bean flour 3 cups 6 cups

Sorghum flour 1 cup 2 cups

Tapioca flour 4 cups 8 cups

Cornstarch 4 cups 8 cups

Xanthan gum 3 T. 6 T.

Salt 1 T. 2 T.

Egg Replacer 1 T. 2 T.

Unflavored gelatin (optional) 3 (7-gram) envelopes 6 envelopes

Sugar 3/4 cup 1 1/2 cups

 

Note: Here is where I change things....grin....I very rarely follow any

recipe exactly.

 

I use garbanzo bean flour instead of garfava because it is easier to get here

and a whole lot cheaper. In place of the gelatin I use Emes. So for the 12

cup mix I put 1 T. of Emes gelatin in or double that for the 24 cup mix.

Dear Tracy,

 

Thanks so much for your vegan version of gluten free bread! I really

appreciate the recipe and hope to try it soon. I haven't tried an

Emes version. . .only a flax seed gel substitution. It turned out

just " okay " but had a very short shelf life. I'm eager to give your

recipe a try. Thanks so much!
