First of, I typed this recipe exactly how it is in Bette's book. At the end I

will show you how I make it vegan and lower in fat.

 

 

Bette's Four Flour Bread

 

DRY INGREDIENTS SMALL MEDIUM LARGE

Bette's Four Flour Bread

Mix (1st email) 2 1/4 c. 3 1/3 c. 4

c.

Dry yeast granules 2 1/4 tsp. 2 1/4 tsp. 2 1/4 tsp.

 

WET INGREDIENTS

Eggs 1 plus 1 white 1 plus 2 whites 1 plus 3

whites

Margarine or butter 3 T. 4 1/2 T.

1/3 c.

Dough enhancer or vinegar 1/2 tsp. 3/4 tsp. 1

tsp.

Warm water, milk, or

nondairy substitute 1 c. 1 1/2 c. 2

c.

 

Place ingredients in the bread machine in the order suggested by your machine

manual. Use the setting for white bread with medium crust.

 

VARIATIONS:

 

LEMON-POPPY SEED: For each cup of mix used, add 1 tsp. dried lemon peel and 1

tsp. poppy seeds to the dry ingredients.

 

QUINOA BREAD: For each cup of mix used, add 1 T. quinoa flour to the dry

ingredients and 1 tsp. honey to the wet ingredients.

 

ALMOND BREAD: For each cup of mix used, add 1 1/2 T. almond meal to the dry

ingredients and 1/2 tsp. almond flavor to the wet ingredients.

 

CINNAMON NUT: For each cup of mix used, add 1/2 tsp. cinnamon to the dry

ingredients and stir in 2 T. chopped nuts after the dough is mixed when

baking by hand; when using a bread machine, add the nuts when the machine

manual suggests.

 

SESAME BEAN BREAD: For each cup of mix used, add 1 T. toasted sesame seeds to

the dry ingredients and 1 tsp. molasses to the wet ingredients.

 

Tracy's Notes:

I have found that anytime I am making gf bread it works better to mix the

flour and yeast together before I add the liquid stuff. Otherwise, I get

clumps of yeast throughout the loaf.

 

Okay, I use flax meal for the eggs. I boil 1 c. of water and add 1 T. flax

meal. Let it sit for 5 minutes and use it in place of eggs. I always make

the large loaf and I use 1/2 c. of the flax meal per loaf.

 

I use lemon juice for the vinegar.

 

I DO NOT use any margarine or butter. I usually will pour a little bit of

liquid lecithen in the bread pan (under a tsp.). I always use water instead

of nondairy milk but you could add that if you want to.

 

My bread machine has a quick bread cycle and that is what I use. My quick

bread cycyle only has one rising time.This always comes out excellent. If you

do not have a bread machine and want the instructions to make it by hand let

me know and I will type them out. I have never been able to make the bread by

hand or any gf bread for that matter. It just never turns out as well as in

the machine.

 

I usually let it cool completely and then put it in a freezer bag on the

counter. The next day I slice it in slices and put it back in the freezer bag

and stick it in the freezer.
