This quick and easy high protein dish can be made a day ahead to allow the flavors to blend. It travels well, so take it to your next picnic! It is also great to have around for an instant snack. 1# tub firm tofu 3-4 ribs celery, minced 1/3 C onion, minced 3-4 cloves garlic, minced 1/4-1/3 C tofu mayonnaise 2-3 Tb. lemon juice 2-3 Tb. Braggs Liquid Aminos (or other salt seasoning) 1-2 tsp. prepared mustard (or a bit more to taste) 1-2 tsp. turmeric 1/2 tsp. veggie pepper (or similar seasoning) Drain the tofu well and press it between the palms to release some excess liquid. Crumble well into a mixing bowl. Add chopped vegetables, tofu mayonnaise, mustard, and seasonings. Mix well to blend but do not over stir. If this supposed to be Lb or another weight/measurement.
