Guest guest Posted October 17, 2002 Report Share Posted October 17, 2002 Banana Bake Source: Dining in the Raw 3 c. ripe bananas, sliced 1/2 c. pineapple juice 1/2 c. pecan meal 2 tsp. maple syrup 1/4 tsp. each nutmeg and cinnamon 1/4 c. pecans garnish Soak bananas in pineapple juice about 30 minutes. Mix drained bananas with the pecan meal, maple syrup and spices and fill an 8 " x 8 " glass baking dish. Bake covered at 425' for 15 minutes. Remove cover and top with finely chopped pecans.
