Guest guest Posted October 17, 2002 Report Share Posted October 17, 2002 1 c. vegetable broth 1/2 c. quinoa, rinsed 2 c. frozen peas, thawed 3/4 c. chopped green onions 1 tomato, chopped 1/2 c. chopped cilantro 3 T. lime juice 1 T. soy sauce several dashes of Tabasco sauce (check for gf) freshly ground black pepper to taste Place the vegetable broth in a saucepan and bring to a boil. Add the quinoa. Cover, reduce heat, and simmer for 10 minutes. Remove from heat and set aside. Combine the peas, green onions, tomato and cilantro. Add the cooked quinoa and mix well.
