Guest guest Posted October 17, 2002 Report Share Posted October 17, 2002 Yummy Yams Source: Sandy M. on Veg-Recipes list 2 large yams or 4 med sweet potatoes Bake 1 hour at 350 degrees or until done. Peel skins off when cool and process the yams in your food processor with the following ingredients: 1/4 cup soy milk 1 tsp coriander 1/4 tsp salt 2 Tbsp honey (or alternative) 2 tsp molasses 2 tsp vanilla blend until mixture is whipped well, add more soy milk if needed. Pour into prepared baking dish, top with chopped pecans, cover, and bake at 350 degrees for 30 minutes to heat through. 1/2 cup chopped pecans This is a slight variation from a recipe from the StepFast program. Low on fat and no processed sugars. This is deliciously sweet and reminds me of squash pie.
