Cooking vegan is a cinch compared to having to add in the gf factor. It is a good thing I went vegan before finding out we had to go gf. It was only about 5 or 6 months before so it was still quite a shock. I can barely remember the days where I made all of that delicious whole wheat bread, pizza and so many other foods were so much easier to make. Now, I make separate foods for 1/2 of the family. My husband has had such relief from agony by going on this diet that he simply does not cheat. The rest of us can eat gluten (so far at least) but for family meals we eat gluten-free. I'm still learning and there are several things I haven't found satisfactory replacements for, such as a vegan, gf sandwich bread. I tried, and as so many others complain of, had my share of flops. My husband finally said he would rather do without bread at all, so that's what we do! I still hope to find one that he likes some day. . . I've been a vegetarian all my life, but started cooking vegan about 18 years ago (about the time we had our first child). My husband's parents adopted a vegan diet about that time and were a very influencial factor in our decision to eliminate animal products from our kitchen. Hmmmmm, you mentioned all that delicious whole wheat bread, pizza, and I'll add quick breads, muffins, cookies, pies, etc. to the list. I have a Bosch, Whisper Mill, and Zojuriushi Bread Machine. . .and I used to keep them very busy. . .but for now they mostly take up cupboard space. I think it was a good thing you went vegan before you went gluten-free! I imagine it would be most difficult to do both at once. It really does take a change in attitude about food, doesn't it!?!?!
