Guest guest Posted October 14, 2002 Report Share Posted October 14, 2002 Tamale Casserole Source: http://www. 1 2/3 cup polenta 2 cups corn 1 quart tomatoes 2 tsp. salt 1 cup water 1 onion, chopped sliced olives 1/4 - 1/3 cup oil Heat all ingredients except polenta. When mixture comes to a gentle boil, slowy stir in polenta. Continue to stir while thickening. In prepared casserole dish, pour half of the polenta mixture. Then add: 3 -4 cups of prepared beans or chili. Then add remaining polenta mixture.
