Guest guest Posted October 9, 2002 Report Share Posted October 9, 2002 Gazpacho Source: NEWSTART Cookbook This makes a " rich raw " meal! 1 quart " V8 " or tomato juice 1 cucumber, peeled and diced 1/4 " 1 1/2 cups diced, fresh tomato 2 stalks celery, diced 1/4 " 1/3 green bell pepper, diced 1/4 " 2 Tbsp. onion flakes 1 Tbsp. parsley flakes Combine all ingredients and chill several hours before serving. Do not heat. Serve chilled. Garnish with fresh parsley. For variation, add a small can of diced green chilies. Yields: 6 1/2 servings.
