Guest guest Posted October 6, 2002 Report Share Posted October 6, 2002 Sunflower Crackers Source: Still Going Against the Grain/Potts (adapted) 1 cup ground sunflower seeds 1/4 cup cold water 1/2 cup shredded coconut 1 tsp. pectin (or Xanthan gum) Combine ingredients and pat out dough on greased baking sheet. Place a sheet of waxed paper on top of the dough. Roll out to the edges of the sheet with a rolling pin to no less than 1/8 inch. Score with a knife in whatever shapes you like. Place in a cold oven. Turn oven to 300 degrees and bake for 15 - 20 minutes or until lightly browned. Let cool for 5 minutes before removing crackers from sheet.
