Guest guest Posted October 6, 2002 Report Share Posted October 6, 2002 Topsy Turvey Pudding Source: Still Going Against the GRAIN/Potts (adapted) 1/2 cup rice flour 1/2 cup bean flour 1 tsp. Xanthan gum 2 tsp. baking powder 1/4 tsp. salt 1/2 cup sugar 1/4 cup vegetable shortening 2/3 cup water 1 2/3 tp 2 cups dark cherries, pitted 1 cup cherry juice 1/2 cup sugar Sift the first 6 ingredients together. Add oil or softened shortening and water. Beat until smooth. Pour into well-greased casserole or 8 " baking dish. Put cherries on top. Combine juice and sugar and pour over cherries. Bake 350 degrees for 45 minutes. *You can substitute 1/8 cup oil for the shortening. The cake will be a bit denser than if you use shortening.
