Guest guest Posted October 5, 2002 Report Share Posted October 5, 2002 Blueberry Rice Salad Source: Ten Talents 2 cups steamed cold rice 2 cups fresh blueberries 1/2 cup flaked coconut 1/2 cup chopped pecans or almonds 1/4 cup honey (or alternative sweetener) Soy whipped cream Mix blueberries, cold brown rice, coconut, honey and nuts together. Fold in about 1 cup soy whipped cream. Top with toasted coconut.
