Guest guest Posted October 2, 2002 Report Share Posted October 2, 2002 http://members.tripod.com/~gfcfrecipes/ Eggplant " marinara " Sauce 1 large eggplant, skinned and cubed into 1 inch squares 1 large onion 3/4 cup olive oil 1 large can of tomatoes (Hunts crushed tomatoes) 3/4 can of water Saute eggplant and onions in olive oil until soft. Add canned tomatoes and water. Pinch of baking soda (is this OK), 1 tablespoon of sugar, Italian spices. Cook about 1hour 1/2. Pour over rice penne. Good luck.
