Cashew nuts are already processed to be eaten raw. An extremely versatile nut for the vegetarian cook. Cashews can be used in making delicious cream soups, milk, nut butters, ice creams, in a roast as a binder or eaten just as they are. Because the cashew nut is soft, it can be blended to a smooth white liquid with no residue. High in protein and of mild flavor --- this nut can be incorporated into many dishes.
