Used widely in infant feeding. When heated in water it thickens (basic proportions 1 cup water and 1 1/2 Tbsp. arrowroot). Can be used in place of cornstarch or flour to thicken gravy, soups, fruits, etc. Arrowroot flour is made from the beaten pulp of tuberous rootstocks of a tropical American plant. It is not a refined product but simply a smooth textured dried and powdered root, high in minerals.
