On one of my searches on the internet I found a recipe for a chocolate cake from the depression era that was dairy and egg free. I have since adapted it to be gluten free and I have found it to be very successful. So far I have made it as muffins, a square slab and a loaf. All worked out well. Recipe is below if you are interested. BTW my son can't have choc so I made it carob and left out the chips - still amazing. One batter made 8 " square cake. Doubled made 12 muffins and loaf. Egg-Free Dairy-Free Nut-Free Cake Submitted by: Bridget Brooke-meer This chocolate cake is so good, you'll never miss the dairy products! Check at your health food store for tofu or non-dairy chocolate chips. Servings: 8 Ingredients: 1 1/2 cups gf flour * 1/2 teaspoon salt 1 cup white sugar (I used brown) 1/4 cup unsweetened cocoa powder (I used carob) 1 teaspoon baking soda 1/3 tablespoons vegetable oil 1 tabs white vinegar 1 teaspoon vanilla extract 1 cup cold water (I used cold soda water) 1/2 cup semi-sweet chocolate chips Directions: 1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan. 2. In a large bowl, combine flour, salt, sugar, cocoa powder, and baking soda. Mix well with a fork (I whisked it), then add wet ingredients and stir until batter is smooth. Stir in chocolate chips and pour batter into prepared pan. 3. Bake in preheated oven for 30 to 35 minutes, until a toothpick inserted in centre comes out clean. I covered with foil when top looked like it would burn and then continued to cook on slightly lower temp until skewer came out clean I didn't time it but it took longer than 35 minutes. Cool on a rack. * I used 1 1/2 cups of my normal blend which is :- 1 cup Cornstarch or Arrowroot 1/2 cup Besan or Brown Rice Flour 1/2 cup of Potato Starch 2 tsp Xanthum gum One note I once subbed Tapioca in for the potato starch and it failed miserably being gummy in the centre and sinking in the middle.
