impossible pecan pie, no added fat

Crustless, Quick, Yummy Pecan Pie

1 ½ cup pecans; chopped

 

¾ cup non-dairy milk

¾ cup maple syrup (or some type of gf liquid sweetener)

¼ cup apple sauce

1 ½ tsp vanilla

6 tsp. powdered egg replacer with 8 Tbls. water

¾ cup ground dried dates or raisins, packed

1/3 cup brown rice flour

3 tbsp. tapioca starch

¼ tsp. cream of tartar

¼ tsp. baking soda

¼ tsp. xanthan gum

pinch of salt

 

Preheat oven to 350F. Grease pie plate, 9 " x1 1/4 " . Chop coarsely

and sprinkle pecans in plate. Beat remaining ingredients till

smooth; 15 seconds in blender on High or 1 minute with hand

beater. Pour into plate. Bake till knife inserted in centre comes

out clean, 50-55 minutes. Cool.

What function do the dates/raisins have in this recipe. If my son can't do

dates what would you replace them with or would you just omit them?

They add sweetness and texture. Probably substituting more

raisins, or some other sweet dried fruit that he can eat, instead

would work. Figs probably wouldn't be sweet enough, but might be

good; dried pineapple chopped up would probably be sweet enough,

but would be fibery. I think I'd probably go with just more

raisins.
