Guest guest Posted September 12, 2002 Report Share Posted September 12, 2002 Potato Pancakes (Serves 6) 3 cups potatoes - cooked and mashed, or raw and grated* 1 onion, peeled and chopped* Pepper and salt to taste Handful of fresh parsley, finely chopped* (optional) 2 tablespoons oil 1) Mix onion and seasonings with potatoes. Form 6 pancakes from mixture. 2) Heat oil in pan over medium heat.** Fry pancakes until lightly browned. Turn over pancakes and fry on other side until golden brown.
