Guest guest Posted September 12, 2002 Report Share Posted September 12, 2002 Potato Salad with chickpeas and smoked tofu " Die vegane Küche " from Ingrid Newkirk and Peta 1 lb hard boiling potatoes 1/2 l vegetable broth 1 can chickpeas 2 onions, cubed 1 cucumber, sliced 4 tomato, in eights 1 package smoked tofu, cubed 4 tbs sunflower oil 2 tbs balsamico vingegar 1 bunch parsley, finely chopped 2 tbs whole grain mustard salt and pepper to taste Cook potatoes in their skin, best the day before, then they won't fall apart. Peel and slice. Pour the vegetable broth over them. Mix the remaining ingredients and let stand.
