Guest guest Posted September 11, 2002 Report Share Posted September 11, 2002 Tamale Pie Source: A Taste of Nature 1 onion, diced 1 green pepper, diced 3 cups canned tomatoes, chopped (28 oz. can) 2 cups frozen whole kernel corn 1/2 cup sliced olives 2 tsp. garlic powder 2 Tbsp. chili powder substitute (or regular chili powder to taste) 1 tsp. salt (or to taste) Topping 3 cups water 1/2 tsp. salt 1 cup cornmeal Saute onion and pepper in large skillet with small amount of water. Add remaining ingredients, except topping ingredients. Simmer about 30 minutes, stirring occasionally. Add a little water, if necessary. To make topping: Bring 1 1/2 cups water and salt to a boil. Mix 1 cup cornmeal and 1 1/2 cups cold water together. Stir into boiling water. Simmer 5 minutes, stirring occasionally. Pour tomato mixture into baking dish; spread topping evenly over it. Garnish with paprika. Bake about 30 minutes at 350 degrees.
