They are dense, moist, and have a wonderful crispy crust. I served them with a creamy, cashew gravy; and a dessert version with pure maple syrup. I hope you enjoy them as much as we did. 1 cup quinoa flakes 1/4 - 12 cup ground pecans 1/4 cup maple syrup 1/4 tsp. soy lecithin 1/2 tsp. salt 1 Tbsp. oil 1/3 cup soymilk plus 2 Tbsp. Beat lecithin into soy milk. Add salt, oil, maple syrup. Stir well. Add pecans and quinoa flakes. Beat. Set aside for 5 - 10 minutes. Then bake in hot waffle iron. Do not open top until light goes out.
