Susan, here's a waffle recipe I really like. It should work well in

a non-electric iron. When baking gluten-free waffles I've found that

it is important to keep the waffle iron closed until completely

cooked with no peeking! Glad to have you with us on VGF.

Rice Waffles

Source: NEWSTART Lifestyle Cookbook

 

1 3/4 cups water

1 cup soaked brown rice (soak rice in water for several hours or

overnight)

1/2 cup nuts or sunflower seeds

1 cup cooked brown rice

1/2 cup water

1/3 cup unsweetened coconut (optional)

1 tsp. vanilla, or 1/2 tsp. maple flavoring

1/2 tsp. salt

 

Process first 3 ingredients in a blender for about 1 minute. Add

remaining ingredients and continue blending until smooth. Pour onto

preheated waffle iron, sprayed with a pan spray, covering all the

grids and edges. Bake utnil steaming stops, about 10 minutes.
