Guest guest Posted September 5, 2002 Report Share Posted September 5, 2002 Carrot Loaf Source: A Taste of Nature 4 cups grated carrots 4 cups cooked millet or rice 1 cup bread crumbs (gluen-free if necessary) 2 Tbsp. peanut butter 1/2 cup water 1/2 onion, diced 1/2 tsp. thyme 2 tsp. salt, (if millet or rice was cooked unsalted) Mix ingredients together. Place in 2 quart casserole dish. Bake at 350 degrees for 30 - 40 minutes, until firm and light brown. Garnish with parsley flakes.
