Hi Everyone;

 

I was about to make that gluten-free pizza crust that was posted

last week, and just as I was about to rip open the Fleishmann's

yeast packet, it occured to me to wonder if it was gf. So, I

wrote to them with my question... and following is what I got

back. I'd substitute ground flax seed for eggs in the recipes at

the end I suppose. Deborah

Fleischmann's Yeast is gluten-free. I have included or attached a

collection of gluten-free recipes and a list of resources for

gluten-free scratch baking. Please be aware that gluten-free

yeast bread is compact. Gluten is the network that traps carbon

dioxide to leaven the dough.

Makes 1 (2-pound) loaf

 

 

 

 

2 3 / 4 teaspoons FLEISCHMANN'S Bread Machine Yeast

2 cups white rice flour

1 / 2 cup potato flour

1 /2 cup tapioca flour

1 / 4 cup potato starch

2 / 3 cup nonfat dry milk powder

1 1 / 2 teaspoons salt

3 tablespoons sugar

1 tablespoon xantham gum

1 1/ 2 cups water

1 / 4 cup corn oil

3 large eggs, beaten

1 teaspoon cider vinegar

 

 

 

 

Add dry ingredients, 3 / 4 cup water, 2 tablespoons corn oil, 2

eggs, and cider vinegar to bread machine pan in the order listed.

Select basic cycle; medium color setting; large loaf size. Allow

ingredients to mix for 2 minutes; gradually add the remaining

liquid ingredients.

 

 

 

 

GLUTEN-FREE CINNAMON NUT BREAD
