Guest guest Posted August 14, 2002 Report Share Posted August 14, 2002 SWEET-AND-SOUR CARROT SALAD (courtsy of Recipe De Jour) 8 medium carrots -- thinly sliced 1/2 teaspoon salt 1/2 medium onion -- diced 2 tablespoons sugar 2 tablespoons chopped fresh parsley 2 tablespoons paprika 1 1/2 teaspoons ground black pepper 1/2 teaspoon ground cinnamon 1/4 teaspoon crushed red pepper 1 cup orange juice 1/2 cup red wine vinegar 3 tablespoons olive oil Cook carrot and salt in boiling water to cover 4 to 5 minutes or until crisp-tender; drain. Whisk together onion and next 9 ingredients in a large bowl. Add carrot, tossing well. Cover and chill 4 hours. Yield: 8 servings. I subbed millet vinegar and reduced the amount as millet vinegar has a stronger taste.
