Guest guest Posted August 2, 2002 Report Share Posted August 2, 2002 Cucumber Cumin Salad 16 ounces plain, soy yogurt 3 medium organic cucumbers 1 tablespoon chopped fresh chives 1 tablespoon chopped fresh dill 2 teaspoons cumin powder 4 sprigs parsley Peel and cube cucumbers. Drain cucumbers in a strainer overnight to remove excess water. Blend all ingredients in a large glass bowl. Garnish with fresh parsely sprigs.
