Guest guest Posted August 2, 2002 Report Share Posted August 2, 2002 Creamy Celery Soup Source: adapted from " Orange County Register " 1/2 cup uncooked white long grain rice 4 cups water 1/4 tsp. salt 3 stalks celery, washed and chopped 1 medium onion, peeled, thinly sliced 1/2 cup chopped fresh parsley Place rice, water and salt in medium-large saucepan on high heat. Bring to boil. Add pepper, celery, onion and parsley. Cover partially and lower heat to simmer. Cook until rice and celery are tender, about 15 - 20 minutes. Ladle into bowls and serve.
