Guest guest Posted July 30, 2002 Report Share Posted July 30, 2002 DATE DELIGHTS 4 Tbsp. nut butter (cashew, almond, peanut, etc.) 4 Tbsp. honey (or liquid alternative sweetener) 1 cup finely chopped dates 1 cup granola 1 cup finely ground nuts or coconut Melt nut butter and honey in a saucepan on low heat. Add the chopped dates. Cook stirring constantly until dates are almost dissolved. Remove the date mix from the heat and stir in the granola. When cool enough, roll into small balls and then roll the balls in the coconut or the ground nuts. This makes 2 dozen small balls.
