Guest guest Posted July 29, 2002 Report Share Posted July 29, 2002 Tofu Salad Dressing 6 oz. soft tofu 1/2 tsp. lemon juice3 1/4 tsp. salt 1/4 tsp. fresh lime juice 1/2 tsp. olive oil Salt to taste Place tofu in water and bring to a boil. Cook for 8 minutes and then drain. Place tofu in a linen napkin or cheesecloth and squeeze lightly to remove excess water. Place tofu in a bowl and mash until smooth. Add lemon juice, salt, lime juice, oil, and salt. Mix well. The final consistency should be like that of yogurt. Refrigerate before serving.
