Guest guest Posted July 27, 2002 Report Share Posted July 27, 2002 Potato & Lima Bean Curry in Coconut Milk Source: Julie R. in Tasmania - CVC list member 3 or 4 large potatoes, cut into 1 " cubes 2 cups cooked lima beans 1 cup peas 1 onion, chopped 1 Tablespoon oil 1 Tablespoon curry powder 3 cups coconut milk Saute onion in oil, till just turning brown. Add curry powder and simmer for a couple of minutes before adding the coconut milk. Stir well and add potatoes, peas. Simmer till potatoes are cooked before adding the Lima beans. Simmer for a few more minutes. Serve hot with rice. Note from Julie: Use the method I described to get the coconut milk. You can also get milk from dried coconut - but the fresh milk is much better in my opinion!
