Even my small sons love this...maybe it's the fun of squeezing the fresh lemon over their plate! ~ Vicky Spinach & Chickpea Dinner Source: Vicky from CVC Ingredients: 1 med. onion 1 10 oz. pkg frozen chopped spinach 1 15 oz. can chickpeas (garbanzo)--Rinsed and drained lemon juice or fresh lemons Optional: Tomatos (canned or fresh), black olives, mushrooms, anything else you may have on hand that you think would taste yummy Cut up an onion and steam in a bit of water for a few minutes while thawing a package of frozen spinach in the microwave. Add the spinach to the onion along with a can of chick peas. Add tomatos, olives, etc...heat through. Serve by itself or over rice. Top with lemon juice to taste. Quick, easy, and yummy!
