Guest guest Posted July 27, 2002 Report Share Posted July 27, 2002 Potato Patties Source: 100% Vegetarian (adapted) Combine the following in a saucepan: 3 cups potatoes, peeled and diced 1 cup chopped onion 1 cup water Cook covered over low to medium heat until vegetables are tender, stirring occasionally. Remove vegetables from heat and mash with: 1/2 tsp. salt (or less) 1/2 tsp. garlic powder 1 tsp. dry parsley 2 Tbsp. soy flour Spoon onto oiled cookie sheet, and shape with the back of the spoon. Bake at 350 - 375 degrees on first side. Flip patties. Bake for an additional 15 - 20 minutes on second side. Serve hot as is. They are also pretty tasty cold. These do not freeze well.
