Guest guest Posted July 26, 2002 Report Share Posted July 26, 2002 Mimi's Spicy Chai 2 cups boiling water 500 ml 2 Tbsp fresh ginger, grated 60 ml 3 peppercorns 8 cardamom pods 4 cloves optional-- orange or lemon rind (shave a few slices with a vegetable peeler); fennel or licorice 1/2 cup almond milk (may use oat orsoy) 125 ml nutmeg powder, honey to taste Pour boiling water over spices in a saucepan, simmer 5-10 minutes. Add milk, simmer another 10 minutes. Pour through a strainer into cups. Sweeten with honey and sprinkle on a little nutmeg, to taste. Note from Mimi: I also drink the chai plain, without milk or other condiments. Repeated batches can be made until the spices lose strength.
