Guest guest Posted July 26, 2002 Report Share Posted July 26, 2002 Hearty Macaroni Dinner Recipe By: Simply Vegan -- Debra Wasserman (adapted to gf) Serving Size: 4 2 cups quinoa elbow macaroni 4 cups water 1 onion -- chopped 2 tablespoon oil 3 cups tomato juice -- (or 1 15-oz. can tomato sauce and one cup water) 4 teaspoons chili powder salt -- to taste 1 box frozen corn -- (10 ounce) 1 can kidney beans -- (19 ounce) drained 1 tbsp. nutritional yeast -- (optional but gives a great flavor) Cook pasta in water until tender. Drain. Saute onion in oil in a large pot. Add remaining ingredients, as well as cooked pasta. Simmer 15 minutes, stirring occasionally.
