The Mighty Mac

 

1 cup soaked garbanzo beans

1 1/2 cups water

2 cups rolled quinoa flakes, uncooked

1/4 cup walnuts, chopped

1 medium onion, minced

1 teaspoon salt

1 teaspoon sage

2 tablespoons soy sauce (wheat free)

 

Blend the first two ingredients. Remove to a bowl. Add remaining

ingredients and mix with a spoon. Drop from 1/3 cup measure to form

patties on baking sheet sprayed with non-stick baking spray. Bake

for 25 - 30 minutes. Serve in gf burger buns with vegan mayonnaise,

leaf lettuce, sliced tomatoes, and onions (or have a burger-salad

without bread of any type).

 

Yields: 9 large patties

For variety, us this as a casserole or loaf with gravy.
